It goes without saying that Taco Tuesday has earned a permanent spot at the table each week and since we’re all about that plant-based, sustainable, and organic lifestyle, we do TT the vegan way! And holy moly these are some delicious vegan tacos! They fit right into our “Plant Based Diet” pillar over here at High Vibe Livin and are full of high vibrations.

We picked up this recipe from our great friend and chef Elizabeth Lim of Kale and Coconuts (@kale.and.coconuts) because she’s a goddess in the kitchen - everything she does is ridiculously good looking, good tasting, and full of nutrients. Truly food for the soul.

So let’s get to the goodness...Lentil Tacos with Chipotle Tahini! Who says vegan food has to be boring?! We've found the best way to start eating a more plant-based diet is to start trying out delicious plant-based and vegan recipes of your favorite dishes. Makes it fun and exciting to try a new twist on your old favorites. 




  • 2 Tablespoons extra virgin olive oil
  • 1 medium onion, diced
  • 2 medium garlic cloves, minced
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon ground chipotle powder
  • ¼ teaspoon onion powder
  • 1 teaspoon sea salt
  • a few grinds black pepper
  • 1 cup French green or black lentils, rinsed and drained
  • 2 ½ cups water

Chipotle Tahini:

  • 1 dried chipotle chili, soaked in water for 1-8 hours (or use one from a can)
  • 5 Tablespoons tahini
  • ¼ cup freshly squeeze lime juice
  • ¼ - ½ cup water, depending on how thick your tahini is (start with the lesser amount)
  • 2 medium garlic cloves
  • 1 teaspoon sea salt

& fresh salsa, avocado slices, and your favorite tortillas, for serving  


1. To make the lentils, heat the oil over medium in a medium pot until warm. Add the onion and garlic and sauté until tender, about 6 minutes. Add the spices, salt, and pepper, and stir until fragrant, stirring constantly, about a minute. Add the lentils and water, bring to a boil, lower to a simmer, and cook covered for 25 minutes.

2. Uncover the lentils and turn the heat up. Allow the lentils to continue to cook at a lively simmer, stirring occasionally, until they are completely tender and all of the water has been absorbed, about another 15 minutes.

3. Meanwhile, make the tahini sauce. Add all ingredients to a blender and blend on high until smooth and creamy.

4. Serve the lentils in a warmed tortilla with avocado slices, chipotle tahini, and salsa and serve.
